Liboké with boiled plantains is a popular recipe in the Congo-Kinshasa (DRC) where I am from. Liboké is usually steamed fish or meat that is cooked in banana leaves in a homemade steamer of any sort. Nowadays it is done on a grill, stove top or in a regular oven. What makes the liboké so delicious is how the aromas of all the spices in the banana leaf get infused in the fish or meat with the steam. You don’t need too many spices, but you want to make sure that those you use are effective.

Broiled mackerel with quinoa recipe
Broiled mackerel with quinoa recipe is one of my favorite fish recipes. You don’t feel full after eating this and, of course, it’s so healthy. The fish is cooked in the oven on broil. In less than 30 min, your food will be ready. You can eat it with almost anything (rice, quinoa, potatoes, salads).
What is mackerel?
Mackerel is the name given to a number of different species of fish. They can look like torpedo fish with beautiful patterns on their backs. I grew up eating horsed mackerels, which have a very pleasant flavour and an oily texture. I usually fry them with any type of starch and green vegetables.

I think that my new motto in life is “keep it simple.” LOL MY husband and I looove to entertain. Sometimes, it’s a last minute/spontaneous invitation that we give before looking at what we have in the fridge LOL. Although, I preferably don’t cook chicken for my guests (personal preference), I remembered watching Ina Garten (my favorite of all!) make a whole rosemary chicken and it looked so good; plus I really like lemon.

I am a big fan of Christmas for many reasons. The first one is that we are celebrating the birth of Jesus. As a Christian, to commemorate the birth of our Lord is a powerful testimony of our faith. The second reason is family. Growing up, Christmas day was the day we got to eat something that we usually didn’t during the year. My mom would cook “le canard à l’orange” (duck with orange). It is this juicy meat with a sweet and savory taste that I always found so succulent.

I looove mustard sauce! I always enjoy eating fish with mustard sauce when eating out. I wanted to reproduce something but lighter. I used honey instead of brown sugar with lemon juice. I paired it with some krispy kale chips (which is my favorite snack now!) and some creamy mashed potatoes with no cheese! You can have this dish ready in less than thirty minutes!
