  1. How to Prepare Your Mackerel
    Clean your fish by asking your grocer to gut it or doing it yourself at home. Fresh fish gives the best flavor.
  2. Score the fish and drizzle with fresh lemon juice or vinegar. Make sure all pieces are coated—this helps reduce any strong odor while adding flavor.
  3. Use a mortar and pestle to grind fresh spices for a perfect coating. Avoid blenders to prevent the mixture from becoming too mushy. The spice mixture should be just fine enough to rub into the fish cuts and cavity.
  4. Rub the spice mixture into the scored areas of the fish and refrigerate for at least 30 minutes. The longer you marinate, the deeper the flavor.

How to Broil Mackerel

  1. Preheat your oven to broil and place the rack in the top position.
  2. Lightly spray a baking sheet with cooking spray or brush with oil.
  3. Place your fish on the baking sheet and broil for 10–12 minutes, watching for dark spots to form on the skin. These give a grilled effect and wrinkled texture, which is normal.
  4. Flip the fish carefully and broil the other side for another 10–12 minutes.
  5. Once done, remove from the oven and let it cool slightly. Gently remove the spices before serving.

Description

This recipe is good for any type of fish


Ingredients

Scale

For the fish:

  • 4 mackerel gutted and cleaned
  • 5 stalks of lemon grass (cut into smaller pieces)
  • 1 thump of fresh ginger root peeled
  • 3 garlic cloves peeled
  • 1 bunch of coriander
  • 2 lime (zest and juice)
  • 1 shallot (medium)
  • 1/3 cup of olive oil
  • 1 tbsp of salt

For sauce:

  • 1/3 cup extra virgin olive oil
  • 2 Tbsp of wine vinegar
  • 1 tsp of mustard
  • ½ tsp pepper
  • ½ tsp salt


Instructions

For the fish:

  1. Make four small cuts on each side of your fish.
  2. Put all of your seasonings in a food processor and chop them.
  3. Insert the mixture in your fishes bellies and small cuts.
  4. Drizzle your fish with olive oil.
  5. Put them in a food storage bag and in the fridge for at least 1 hour.
  6. After an hour, turn on your oven on broil.
  7. Put your fish on a baking sheet with a cooling rack. You want the extra water to drip. You can spray your rack with cooking spray to prevent the skin from sticking.
  8. You broil it for 10 min total on EACH side and that’s it!

 

For the sauce:

Put all the ingredients in a glass jar and shake it well.

 

Assembly:

Put on your quinoa on a plate with the fish then pour the vinaigrette.
