A sorghum salad with chicken is the perfect salad to break your routine while eating healthy. You have avocado, chicken, green pepper, red pepper, white beans that comes beautifully together with a red wine shallot vinaigrette. Thus, gives you a salad that is fresh, light and so delicious. What is sorghum?

Sorghum is a cereal grain that grows tall like corn. It is not as popular in north America as it is in the south of the globe. This crop grows in drier regions and has been widely grown in Africa for more than 4000 years. Usually cooked as breakfast porridges or meals throughout the continent. 

While in America, farmers widely use sorghum to feed livestock. This grain is amazingly full of great nutrients and adding it to your diet would help you diversify it a great deal.

What are the health benefits of sorghum?

Sorghum is a nutrient rich cereal grain. It’s rich in vitamins and minerals like B vitamins, magnesium, potassium, phosphorus, iron, and zinc. In addition, it is an excellent source of fiber, antioxidants, and protein. 

Sorghum can replace quinoa and rice in certain recipes. Plus, this grain is gluten free!

In most cases, you can substitute gluten-containing flour for sorghum in baked products like bread, cookies, or other desserts. You can also enjoy this whole grain as a hearty side dish. 

How can I use sorghum in recipes?

It is very versatile that you can use in numbers of recipes.

Flour: Sorghum flour is a great flour for any gluten free baking recipes

Popped: It can be popped like popcorn on a heated pan. Sorghum is considered as a much healthier than popcorn due to it is loaded with fibres and nutrients. 

Flaked: it can be used as a breakfast cereal like oat or in granola bars.

Grains: It replaces rice or quinoa in recipe since it holds its shape very well when cooked.

Syrup. Sorghum syrup is commonly added to processed foods as a natural sweetener or an alternative to molasses.

How do you cook sorghum?

First, in a medium pot, combine the sorghum, water and a pinch of salt.

Then, bring it to a boil for 20 min then reduce to medium heat to simmer for 40 min.

Lastly, you will know that the sorghum is cooked once the grains become softer but still hold their shape.

Note: After cooking, let it cool down for 10 min. If there is excess water, you can drain it in a strainer.

How do you store cooked sorghum?

You can store it in an air tight container for 5-7 days.

In addition, you can also freeze it in plastic bags for 2-3 months. To reheat, you can pour a little bit of water in a small pot on low heat. After that, stir occasionally to prevent it from sticking to the bottom of the pot.

How to make sorghum salad with chicken?

For the dressing:

Red wine vinegar dressing
  1. Add shallot, red wine vinegar, extra olive oil, salt and pepper in a mason jar.
  2. Shake well to combine.
For the salad:
white beans, chopped romaine lettuce, chicken, red pepper, green pepper, sorghum, red wine vinegraitte, avocado
  1. Place sorghum, white beans, lettuce, green pepper, red pepper and chicken.
  2. Drizzle shallot and red wine vinegar dressing and season with salt.
  3. Mix well together.
  4. Tumble into a serving bowl and serve.

Description

A healthy salad perfect for lunch or dinner


Ingredients

½ cup of cooked sorghum

½ cup of cooked white beans

½ of avocado

1 cup of romaine lettuce (chopped)

½ cup of green pepper (chopped)

½ cup of red pepper (chopped)

1 cup of chicken breast diced (cooked)

For the dressing:

½ cup red wine vinegar

½ cup extra virgin olive oil

1 small shallot (chopped thinly)

A pinch of salt

A pinch of pepper


Instructions

Salad Dressing

1.             Add shallot, red wine vinegar, extra olive oil, salt and pepper in a mason jar.

2.             Shake well to combine.

Assembly

1.             Place sorghum, white beans, lettuce, green pepper, red pepper and chicken.

2.             Drizzle shallot and red wine vinegar dressing and season with salt.

3.             Mix well together.

4.             Tumble into a serving bowl and serve.
