Easiest roasted tomatoes recipe in 15 min

This is the easiest roasted tomatoes recipe in 15 min. With time,  I have realized that when cooking the secret is in the details. Sometimes the condiment or side dish can elevate your dish drastically. The little thing that  brings your sauce from good to “oh my goodness” is what is in your tomato sauce! Roasted tomatoes are so versatile that they can be used so many different ways. You can use them as a side dish for your breakfast, in your spaghetti sauce or with grilled meat for your dinner. They are also very delicious in a sandwich.

They are easy to cook and always  bring color to your plate. If you love tomatoes, this roasted tomatoes recipe is for you. For this recipe I used cherry tomatoes because they cook faster due to their size. However, you can use any shape or color of tomatoes and it will work just fine. You might have to increase the cooking time though.

How do you roast your tomatoes?

I toss them into a bowl with salt and pepper, herbs and a dash of olive oil. You can cut them in halves if you want. The result will be the same for cherry tomatoes. Then, I spread them on a baking sheet  and put them in the oven for 15 min. That’s it!

Roasted tomatoes bring a tanginess and punch to your recipe. To add another kick, you can grate parmesan on top of them.

What are the health benefits of eating tomatoes?

Beta-carotene found in tomatoes, carrots and sweets potatoes help protect your skin against the sun.  Your skin become less sensitive to UV light damage which can cause  fine lines and wrinkles. Also, tomatoes are a very good source of chromium, which helps to regulate blood sugar.

Another great benefit eating tomatoes is that it can improve your vision. The vitamin A that tomatoes provide can improve vision and help prevent night blindness. You can find out more benefits here.

How do you store roasted tomatoes?

You can store them in a glass jar with their juice for 3-4 days. You can also freeze them and purée them for a tomato sauce later on.

Description

A easy and fast tomatoes recipe  great for breakfast, lunch and dinner.


Scale

Ingredients

2 cups of cherry tomatoes

A dash of olive oil

1/4 tsp of salt

A pinch of pepper


Instructions

Preheat the oven at 350 F.

In a bowl, halve each tomato.

Add salt, pepper and olive. Toss them together.

Place them on a baking sheet into your oven for 15 min.

Once ready, take them out immediately.


Notes

Bigger tomatoes will require more time.
