This is the easiest roasted tomatoes recipe in 15 min. With time,  I have realized that when cooking the secret is in the details. Sometimes the condiment or side dish can elevate your dish drastically. The little thing that  brings your sauce from good to “oh my goodness” is what is in your tomato sauce! Roasted tomatoes are so versatile that they can be used so many different ways. You can use them as a side dish for your breakfast, in your spaghetti sauce or with grilled meat for your dinner. They are also very delicious in a sandwich.

Liboké with boiled plantains

Liboké with boiled plantains is a popular recipe in the Congo-Kinshasa (DRC) where I am from. Liboké is usually steamed fish or meat that is cooked in banana leaves in a homemade steamer of any sort. Nowadays it is done on a grill, stove top or in a regular oven. What makes the liboké so delicious is how the aromas of all the spices in the banana leaf get infused in the fish or meat with the steam. You don’t need too many spices, but you want to make sure that those you use are effective.

Broiled mackerel with quinoa recipe is one of my favorite fish recipes. You don’t feel full after eating this and, of course, it’s so healthy. The fish is cooked in the oven on broil. In less than 30 min, your food will be ready. You can eat it with almost anything (rice, quinoa, potatoes, salads).

What is mackerel?

Mackerel is the name given to a number of different species of fish. They can look like torpedo fish with beautiful patterns on their backs. I grew up eating horsed mackerels, which have a very pleasant flavour and an oily texture. I usually fry them with any type of starch and green vegetables.

Chicken yassa with rice recipe is a staple dish in Senegal. This particular dish originates from the southern part of the country, Casamance. Known for its beautiful coasts and amazing fabrics, Senegal is a country in western Africa that  brings so much to the African gastronomy. In the last five years, there has been a buzz about a grain that dates back to ancient Egypt called fonio, found in Senegal. This grain is a superfood and it is slowly gaining interest in America. The spices and herbs used in their cuisines have distinct flavors and aromas and are still relatively unknown to the rest of the world. Senegalese cuisine has a diversity of cooking techniques acquired through their contact with other cultures.
