Zucchini Salad with red peppers and cream cheese

Since it is officially spring (although it doesn’t feel like it at time with this crazy weather), a zucchini salad with red peppers is the perfect salad for the season. It is crunchy, creamy and fresh at the same time. The mint gives it its freshness while the cream cheese makes it creamy. I added cilantro because I think cilantro makes any salad better. 

This salad is tasty and I like to pair it with some bread or grilled meat on the side. How easy is it to make this salad? Just put everything in a bowl and mix it!

Description

This is recipe is great for spring and summer


Ingredients

Scale
  • 2 Zucchini (diced)
  • 1 Red pepper (diced)
  • 3 young onions (diced)
  • ¼ cup Coriander (chopped)
  • 1 Garlic glove (minced)
  • ½ cup Mint (chopped)
  • ½ cup Feta cheese (diced)
  • Cream cheese (1Tbsp)
  • 1 Lime juice
  • A pinch of Salt & pepper

Instructions

  1. Mix all the ingredients together in a bowl. Sprinkle the lime juice on it and season it with salt and pepper.
  2. Cover it with plastic wrap and let it sit for 15 min. 
  3. Serve cold.

Notes

I usually serve this recipe with some toasted bread.
