Sorghum is a nutrient rich cereal grain. It’s rich in vitamins and minerals like B vitamins, magnesium, potassium, phosphorus, iron, and zinc. In addition, it is an excellent source of fiber, antioxidants, and protein.
Sorghum can replace quinoa and rice in certain recipes. Plus, this grain is gluten free!
In most cases, you can substitute gluten-containing flour for sorghum in baked products like bread, cookies, or other desserts. You can also enjoy this whole grain as a hearty side dish.
How can I use sorghum in recipes?
It is very versatile that you can use in numbers of recipes.
Flour: Sorghum flour is a great flour for any gluten free baking recipes
Popped: It can be popped like popcorn on a heated pan. Sorghum is considered as a much healthier than popcorn due to it is loaded with fibres and nutrients.
Flaked: it can be used as a breakfast cereal like oat or in granola bars.
Grains: It replaces rice or quinoa in recipe since it holds its shape very well when cooked.
Syrup. Sorghum syrup is commonly added to processed foods as a natural sweetener or an alternative to molasses.
How do you cook sorghum?
First, in a medium pot, combine the sorghum, water and a pinch of salt.
Then, bring it to a boil for 20 min then reduce to medium heat to simmer for 40 min.
Lastly, you will know that the sorghum is cooked once the grains become softer but still hold their shape.
Note: After cooking, let it cool down for 10 min. If there is excess water, you can drain it in a strainer.
How do you store cooked sorghum?
You can store it in an air tight container for 5-7 days.
In addition, you can also freeze it in plastic bags for 2-3 months. To reheat, you can pour a little bit of water in a small pot on low heat. After that, stir occasionally to prevent it from sticking to the bottom of the pot.
