By now, most of you know that I love making, eating and developing all sorts of African beignets (also called puff-puff), recipes. This delicacy is very popular throughout sub-Saharan Africa. It might be known under different names but the cooking process is roughly the same everywhere.

I thought I would do a roundup of succulent puff-puff recipes that would make you fall in love with them like never before. For those of you that are just discovering them, I guarantee that you will not be bored with this selection. I would suggest, trying different recipes, at least one per week. Wait. African beignets, also known as mikate in Congo, puff-puff in western Africa, are a very popular dessert/snack in Africa. These beignets come with a mango sauce with mint leaves. They are so delicious; I could eat them at any time of the day. Contrary to New Orleans beignets, the mikate are made with just flour and sugar, which are dipped fried later on.
