French Crêpes With Apple Stuffing (Holiday-Friendly!) Updated

If you know me, you already know I’m a proud dessert girl. Yes, I’ll happily skip the main course just to eat two, maybe three crêpes — no shame here! This French crêpes recipe with apple stuffing is truly one of those desserts that feels elegant, festive, and comforting all at once. And since many of my readers are from France, I know you appreciate a good crêpe fait maison done the right way.

These crêpes are perfect for Christmas dessert, Thanksgiving brunch, a cozy holiday breakfast, or even a last-minute sweet treat when you don’t feel like turning on the oven. (Yes — no baking required! Another holiday miracle.)

I first discovered this version thanks to a French blogger, Samar from Inspirations Culinaires, and the base crêpe recipe comes from legendary French pastry chef Christophe Michalak. When I tell you this batter is smooth, silky, and fail-proof…Succulente!

What makes this recipe extra special is the warm cinnamon-apple stuffing. It’s sweet, lightly spiced, buttery, and tastes like a hug — very on-brand for fall and winter holiday desserts.

Crêpes are my go-to recipe because they are easy to make with very few ingredients. Also, you most likely have these ingredients in your kitchen any day of the week. Moreover, this is a dessert recipe you can make without an oven! So, you have no excuse not to try to make it.

I have tried several crêpes recipes, but this one is the best so far. It is from a talented French chef, Christophe Michalak, who is spectacular with dessert, by the way. I had a chance of trying a few of them in Paris, and I was blown away! 

When it comes to crêpes, you can eat them so many different ways (sweet, savory, with topping, etc) that knowing the basics gives you latitude on how to serve this dessert. I chose apples stuffing since I thought that the design was so darn cute!

Ingredients

Scale
  • 200 g of flour
  • 75 g of butter
  • 75 g of powder sugar
  • 2 eggs
  • 2 egg yolks
  • 500 ml of milk
  • 1 tsp of vanilla extract
  • A pinch of salt

For the apple stuffing:

  • 2 Apples
  • 1Tsp of butter
  • Butter
  • 30 g of sugar
  • Salted Butter
  • 100 ml of whipping cream


Instructions

For the crêpes:

  1. Mix  all the liquids together: eggs, egg yolks, milk and vanilla.
  2. Mix all the dry ingredients together: flour, sugar and salt
  3. Pour the eggs mixture on the flour and mix well.

For the beurre noisette:

  1. Put the butter in  small pan on medium heat. Let it melt and turn the heat off when it turns light brown. Do not let the butter turn black.
  2. Pour the melted butter on the mixture and mix it well.

 

For the apple stuffing:

  1. Peel the apples and cut them in small dices.
  2. Put 1 Tsp of butter in the sauce pan. Wait until it becomes light brown before adding the apples. Stir it well and let the water from the apples and butter evaporate.
  3. Once you see that the apples are well coated with butter, add 1Tsp of sugar to caramelize them. Keep stirring until the sugar has melted and put it aside.
  4. In a different sauce pan, caramelize the sugar on medium heat by stirring without using a spoon from time to time. You can do so by doing circular motions with the pan. Don’t be afraid to turn down the heat or remove the pan from the stove to avoid burning the sugar.
  5. Add the salted butter cut in pieces away from the stove.
  6. Put the pan back on the stove on medium heat and add the whipping cream. It will harden first but don’t worry. Keep stirring and it will loosen up.
  7. Put the caramel in the glass jar.

    Absolutely beautiful! Crêpes are a favorite, and this apple stuffing sounds like the perfect balance of sweet and tart, especially with a hint of cinnamon. It looks like a wonderful brunch or dessert. I need to make these this weekend!
