Tabouli salad with salmon

Do you have days like me where you want to eat but don’t want to feel sluggish afterward? Well, then this salad is for you. Tabouli takes its origin in the middle east, in Lebanon precisely. It is made with bulgur which is a type of wheat. There is “no cooking” required.

Like any salad, you just have to put the ingredients together in a bowl. I added some fish on the side to have some protein on my dish. It’s a very healthy dish, refreshing and absolutely delicious!

Description

This is a healthy recipe with salmon and bulgur. I added mint, cucumber, tomatoes to bring freshness to the salad.


Ingredients

Scale

For the salad:

  • 1/2 cup bulgur
  • 1/2 cup water
  • 2 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon Kosher salt
  •  1/8 teaspoon coarse ground black pepper
  • 4 stalks green onion, minced
  • 1 cup fresh parsley, minced
  • 3 roma tomatoes, chopped finely
  • 1 garlic clove, minced
  • 1/2 cup of mint leaves (chopped)

For the salmon:

  • Salmon filet with the skin
  • Salt and pepper
  • Olive oil
  • Salt and pepper


Instructions

For the salad:

  1. Rinse and soak bulgur until soft, about 30 minutes.
  2. In a bowl, add the lemon juice, olive oil, salt and pepper to a cup and whisk.
  3. Drain the bulgur well, and add in the rest of the ingredients in the bowl.
  4. Stir gently and let sit for at least 30 minutes before serving.

For the fish:

  1. Put all the spices on the flesh of the fish.
  2. Heat the oil in a sauce pan.
  3. Sear the fish by starting with the skin 
  4. Flip it and sear it for 2 min max.
