Amaranth leaves stew recipe is one of my favourite vegetable stew recipes. It is a leafy green and is normally grown in Africa, Asia and the Caribbean. It is known under different names throughout Africa (biteku-teku, efo tete, ndunda). Due to immigration, you can easily find this vegetable in an Asian or international market in America. The plant is considered to be a superfood due to its nutrients and the health benefits from its leaves and seeds.

Spongy madeleines recipe is incredibly easy to make and will be eaten as fast as you make them. Madeleines are French mini cakes that are shell shaped and are plump and spongy. They are very popular in France and are usually flavoured with vanilla or citrus zest. These spongy madeleines are my kids’ favourite and they can’t get enough of them every time that I make them. They call them “surf boards”! LOL

African beignets, also known as mikate in Congo, puff-puff in western Africa, are a very popular dessert/snack in Africa. These beignets come with a mango sauce with mint leaves. They are so delicious; I could eat them at any time of the day. Contrary to New Orleans beignets, the mikate are made with just flour and sugar, which are dipped fried later on.

Smoked salmon with linguine pasta is a recipe that is very dear to my heart.  It brings back so many memories from my time in Italy. When I first moved to Italy, the only pasta recipe that I knew was tomato sauce with pasta. Before me joining my husband (Patrick) in Italy, he had been playing professional basketball there for over five years and he was used to eating pasta every day. At the time, I could only cook congolese food. There was one problem, however, I couldn’t find any African store in the area. I had no choice but to try new recipes! I had countless failed attempts. At some point, I really thought that I would never be able to figure out how to make great pasta. I was getting discouraged. But I kept trying!
