Did I mention that I love making desserts? I loooove making and eating desserts! These crêpes definitely brings the wow factor. I usually skip the main course and go straight to it if I want to eat more than one crepe. Probably not the healthiest choice! LOL
Crêpes are my go-to recipe since it is an easy dessert to make with very few ingredients. Plus, you most likely have these ingredients in your kitchen any day of the week. Plus, this is a dessert recipe that you can make without using the oven! So, you have no excuse for not trying to make it.
I have tried several crepes recipes, but this one is the best so far. I got it from a talented French chef, Christophe Michalak who is spectacular with dessert by the way. I had a chance of trying few of them in Paris and I was blown away!
When it comes to crêpes, you can eat them so many different ways (sweet, savory, with topping, etc..) that knowing the basics give you a latitude on how to serve this dessert. I chose apples stuffing since I thought that the design was so darn cute!

Ingredients
- 200 g of flour
- 75 g of butter
- 75 g of powder sugar
- 2 eggs
- 2 egg yolks
- 500 ml of milk
- 1 tsp of vanilla extract
- A pinch of salt
For the apple stuffing:
- 2 Apples
- 1Tsp of butter
- Butter
- 30 g of sugar
- Salted Butter
- 100 ml of whipping cream
Instructions
For the crêpes:
- Mix all the liquids together: eggs, egg yolks, milk and vanilla.
- Mix all the dry ingredients together: flour, sugar and salt
- Pour the eggs mixture on the flour and mix well.
For the beurre noisette:
- Put the butter in small pan on medium heat. Let it melt and turn the heat off when it turns light brown. Do not let the butter turn black.
- Pour the melted butter on the mixture and mix it well.
For the apple stuffing:
- Remove the skin of the apples and cut them in small dices.
- Put 1 Tsp of butter in the sauce pan. Wait until it becomes light brown before adding the apples. Stir it well and let the water from the apples and butter evaporate.
- Once you see that the apples are well coated with butter, add 1Tsp of sugar to caramelize them. Keep stirring until the sugar has melted and put it aside.
- In a different sauce pan, caramelize the sugar on medium heat by stirring without using a spoon from time to time. You can do so by doing circular motions with the pan. Don’t be afraid to turn down the heat or remove the pan from the stove to avoid burning the sugar.
- Add the salted butter cut in pieces away from the stove.
- Put the pan back on the stove on medium heat and add the whipping cream. It will harden first but don’t worry. Keep stirring and it will loosen up.
- Put the caramel in the glass jar.
