Delight in Deliciousness with this Simple Cauliflower Soup Recipe!

Cauliflower soup is good for the soul. Its richness and velvety texture make it perfect for cold weather. I remember eating it for the first time at a French restaurant, and I was blown away! Simple but full of flavor. I had to learn how to make it!

One thing that caught my attention was how white and creamy it was. Minimal heavy cream was added to make it rich. Cauliflower is such a fascinating vegetable. It is versatile and has so many health benefits. It can be fried, roasted, grilled, or boiled. I didn’t grow up with it, so learning more about it when I moved to America has been fun. Its shape, texture, and color are so distinct that it wouldn’t go unnoticed.

What is cauliflower?

Cauliflower is a member of the cabbage family. You might know its family members: cabbage, broccoli, brussels sprouts, kale and turnip. Cauliflower is technically an edible flower. A head of cauliflower is known as the curd. When cauliflower is growing, it looks more like its collard green cousin until it begins to grow its characteristic head. 

How to pick cauliflower at the store?

Since cauliflower bruises easily, you should look for a tightly packed head with even color. Cauliflower is white and can also be purple, orange, and green varieties.

How long can you keep your soup in the fridge?

Any leftover soup can be kept in the fridge for two to three days. I will always smell or taste a little bit of the soup before reheating it. When in doubt, do not eat it again.

Storing cauliflower

Cauliflower can be kept dry and covered in the fridge for a few weeks. When you cut it, cover it with a paper towel and store it in a plastic bag. You can also freeze cauliflower, but the texture will be less crisp when thawed. Frozen cauliflower can be used for soups or purées.

Description

This delicious and creamy soup can be topped with croutons and your favorite seeds or herbs.


Ingredients

1 cauliflower

2 potatoes (medium size)

1 big onion (chopped)

2 cups of milk

1 cup of water

1 cup of vegetable broth

1 stick of butter

½ cup of heavy cream

Salt & white pepper


Instructions

1. Cut your cauliflower in medium size chunks.

2. Peel and cut your potatoes in big chunks.

3. Melt the butter on medium-high heat in a medium-sized pot.

4. Once the butter has melted, put your onion and stir occasionally.

5. Once they get translucid, add the potatoes and cauliflower.

6. Make sure that each piece is well coated with butter by stirring frequently for 5 min.

7. Add milk, water, broth.

8. Let it boil for 30 min or until everything gets soft.

9. Add the heavy cream and stir.

10. Turn off the stove.

11. Mix all the ingredients with a hand mixer.


Notes

Tip: Adjust seasoning if needed with salt and white pepper.
