It is a delicious cake that can be held cold or warm. The peppers are seasoned and cooked before added to the batter.

2 cups of chorizo (diced)

1 ½ cup of flour

3 eggs

3 halves of peppers (red, greens, yellow chopped)

1 medium size mozzarella (diced) or goat cheese

¾ cup of milk

2 Tbsp of olive oil

1 clove of garlic

½ cup of gruyere (grated)

1 tsp of baking powder

¼ tsp salt

A pinch of pepper

A dash of oil (to cook the peppers)

Preheat the oven at 350 F.

Spray your cupcakes with baking spray.

Cook your peppers and garlic on medium high heat in a small saucepan. You will just need a dash of oil to cook them. Season them with salt and pepper and stir well. Once the peppers soften, turn off the heat and set them aside.

In a bowl, mix the flour and baking powder.

Add the eggs to the flour and mix well.

Incorporate the oil progressively into the mixture.

Add the milk progressively, as well.

Season it with salt, if need be.

Add the mozzarella and gruyere cheese.

Then add the peppers and the chorizo and stir well.

Pour the batter in the molds .

Bake for 45 min.

Let it rest for at least 15 min before removing the mold.
