Description

Spongy madeleines recipe in less than an hour.


Ingredients

Scale
  • 1 cup of all-purpose flour
  • 3 eggs
  • ½ cup of sugar
  • 1 ¼ stick of butter 
  • ¼ cup of milk
  • ¼ cup of oil
  • 1 tsp of baking powder
  • 2 tsp of honey
  • 1 flat tsp of salt
  • 2 tsp of lemon zest
  • 1 tsp of vanilla

Instructions

  1. Melt the butter and put it aside.
  2. In a bowl, beats the eggs with sugar and beat lightly.
  3. Add the honey, salt, oil, lemon zest and vanilla while whisking and you get a homogenous mixture.
  4. Add the baking powder, melted butter, milk, flour and mix well. Do not over mix it.
  5. Cover the bowl with a plastic wrap and put it the fridge for 30 min.
  6. Preheat your oven at 350F.
  7. Butter your mold. Then add all-purpose flour to your mold to prevent your madeleines from sticking to it.
  8. Fill your mold with batter but not completely in order to give them room to expand. 
  9. Bake for 10 min. 
  10. Remove them from the mold right away otherwise, they will over bake.
  11. Eat them warm or cold
