Description
Spongy madeleines recipe in less than an hour.

- 1 cup of all-purpose flour
- 3 eggs
- ½ cup of sugar
- 1 ¼ stick of butter
- ¼ cup of milk
- ¼ cup of oil
- 1 tsp of baking powder
- 2 tsp of honey
- 1 flat tsp of salt
- 2 tsp of lemon zest
- 1 tsp of vanilla
Instructions
- Melt the butter and put it aside.
- In a bowl, beats the eggs with sugar and beat lightly.
- Add the honey, salt, oil, lemon zest and vanilla while whisking and you get a homogenous mixture.
- Add the baking powder, melted butter, milk, flour and mix well. Do not over mix it.
- Cover the bowl with a plastic wrap and put it the fridge for 30 min.
- Preheat your oven at 350F.
- Butter your mold. Then add all-purpose flour to your mold to prevent your madeleines from sticking to it.
- Fill your mold with batter but not completely in order to give them room to expand.
- Bake for 10 min.
- Remove them from the mold right away otherwise, they will over bake.
- Eat them warm or cold
