Description

This Chicken Parmesan with Spaghetti is cozy, crispy, and deeply satisfying. Golden breaded chicken cutlets are pan-fried until perfectly crisp, then served over tender spaghetti with garlic-infused flavor. It’s an easy chicken parmesan recipe made from scratch — perfect for a comforting family dinner or a special weekend meal.

For the Chicken Parmesan

  • 2 large boneless, skinless chicken breasts, sliced horizontally (less than 1 inch thick)

  • Salt and black pepper, to taste

  • 1 cup all-purpose flour

  • 2 large eggs, beaten

  • 1½ cups breadcrumbs or panko

  • ½ cup grated Parmesan cheese

  • Olive oil, for frying

For the Spaghetti

  • 12 oz spaghetti

  • Salt, for pasta water

  • ½ cup chicken broth

For the Garlic Butter Sauce

  • 3 Tbsp butter

  • 23 garlic cloves, minced

  • Fresh parsley, finely chopped

  • Reserved pasta water (¼ cup)

  • Optional: extra butter or a splash of cream

  • Salt and black pepper, to taste


Instructions

Prepare the Chicken

  1. Season the chicken cutlets generously with salt and black pepper on both sides.

  2. Set up three shallow bowls: one with beaten eggs, one with flour, and one with Parmesan cheese mixed with breadcrumbs.

  3. Coat each chicken piece in the eggs, then flour, and finally press into the Parmesan breadcrumb mixture until fully coated.

  4. Heat olive oil in a large skillet over medium-high heat.

  5. Cook the chicken for 8–10 minutes total, flipping halfway through, until golden brown and fully cooked.

    • The chicken should never be light pink inside.

  6. Transfer to a plate and set aside.

    Cook the Spaghetti

    1. Bring a large pot of water to a rolling boil.

    2. Add a generous pinch of salt.

    3. Cook the spaghetti for 8–10 minutes, until al dente.

    4. Reserve ¼ cup of the pasta water, then drain the rest.

      Make the Sauce

      1. In a saucepan, melt the butter over medium-high heat.

      2. Add the garlic and sauté until lightly golden and fragrant.

      3. Stir in chopped parsley.

      4. Pour in the chicken broth and reserved pasta water.

      5. Let the sauce simmer gently until slightly reduced.

      6. For a richer sauce, add a little extra butter or a splash of cream.

      7. Season with salt and black pepper to taste.

      8. Add the cooked spaghetti and toss until evenly coated.


Notes

To Serve

Spoon the spaghetti onto pasta plates.

Slice the crispy chicken Parmesan and place on top.

Finish with extra grated Parmesan and freshly cracked black pepper, if desired.
