Ingredients
For the Chicken Parmesan

2 large boneless, skinless chicken breasts, sliced horizontally (less than 1 inch thick)

Salt and black pepper, to taste

1 cup all-purpose flour

2 large eggs, beaten

1½ cups breadcrumbs or panko

½ cup grated Parmesan cheese

Olive oil, for frying
For the Spaghetti

12 oz spaghetti
-
Salt, for pasta water
-
½ cup chicken broth
For the Garlic Butter Sauce

3 Tbsp butter
-
2–3 garlic cloves, minced
-
Fresh parsley, finely chopped
-
Reserved pasta water (¼ cup)

Optional: extra butter or a splash of cream

Salt and black pepper, to taste
Instructions
Prepare the Chicken

Season the chicken cutlets generously with salt and black pepper on both sides.

Set up three shallow bowls: one with beaten eggs, one with flour, and one with Parmesan cheese mixed with breadcrumbs.

Coat each chicken piece in the eggs, then flour, and finally press into the Parmesan breadcrumb mixture until fully coated.

Heat olive oil in a large skillet over medium-high heat.

Cook the chicken for 8–10 minutes total, flipping halfway through, until golden brown and fully cooked.

The chicken should never be light pink inside.

Transfer to a plate and set aside.
Cook the Spaghetti

Bring a large pot of water to a rolling boil.

Add a generous pinch of salt.

Cook the spaghetti for 8–10 minutes, until al dente.

Reserve ¼ cup of the pasta water, then drain the rest.
Make the Sauce

In a saucepan, melt the butter over medium-high heat.

Add the garlic and sauté until lightly golden and fragrant.

Stir in chopped parsley.

Pour in the chicken broth and reserved pasta water.

Let the sauce simmer gently until slightly reduced.

For a richer sauce, add a little extra butter or a splash of cream.

Season with salt and black pepper to taste.

Add the cooked spaghetti and toss until evenly coated.

To Serve
Spoon the spaghetti onto pasta plates.
Slice the crispy chicken Parmesan and place on top.
